Dog days of summer — last Monday was officially the hottest day on record on the planet. Summer is sliding off the top of my list. The one good thing about it is less traffic where we live — schools are closed, everyone is traveling elsewhere.
I miss cold weather cooking — long slow simmering, oven, soups. Trying to experiment with new toys.
South Carolina Boil as it comes out of the air fryer.
WHAT WENT IN
— 1 lb red potatoes, cut into 1” pieces
— 2 ears corn, husk and silk removed, cur in quarters
— 1 tbsp neutral oil
— 4 tsp Old Bay seasoning
— 1 tsp black pepper
— 1 lb extra large shrimp, deveined but unpeeled
— 10 oz andouille sausage cut into 1” rings
— 4 garlic cloves, minced
— chopped parsley
THE PROCESS
1. Preheat the air fryer to 400°F.
2. Mix potatoes and corn with half of the oil, half of Old Bay, and pepper.
3. Mix shrimp and sausage with garlic and the rest of the oil and Old Bay.
4. Arrange potatoes and corn on the bottom of the preheated air fryer. Cook for 12 minutes shaking half way through.
5. Distribute shrimp and sausage on top of the vegetables and cook oof another 8 minutes mixing everything half way through this time.
6. Once done, sprinkle with parsley and serve.
