There are recipes you look at and think — so what? Then you make them and there’s an A-ha! moment.
What was the A-ha! here? Mint and garlic — lots of both — in a burger. They shined through and complemented lamb so fine.
Plus, incredible avocado-yogurt mash — with mint. And garlic. It was one of those discoveries that make you think — I will never eat avocados any other way ever again. Creamy, tangy, green, slightly pungent, that sauce was plain addictive.
You can slice ciabatta rolls in half, line them with lettuce leaves, top with onions, then — burger, then — the sauce.
Alternatively — which also works great for the next day lunch — you can slice the burger horizontally in half. Line each half of sliced ciabatta roll with lettuce, top with onions, then — half the burger, then — sauce, and eat them open sandwich style. This way you can really load it up with the sauce and it wouldn’t squeeze out on the sides. That’s what I did.
WHAT WENT IN
— 1 medium red onion, thin sliced
— 6 ciabatta rolls
— lettuce leaves
For the lamb patty:
— 2 lb ground lamb
— 1/2 cup minced fresh mint leaves
— 1 Tbsp minced garlic
— 1 tsp salt
— 1 tsp black pepper
For the sauce:
— 2 ripe avocados
— 1 cup plain yogurt
— 1/4 cup minced fresh mint leaves
— 1 tsp minced garlic
— salt & pepper to taste
THE PROCESs
1. Soak onions in ice water, rinse, and drain very well.
2. Mix lamb patty ingredients, divide into six portions, and shape the way they would fit ciabatta rolls best. Stack them separating by the pieces of parchment paper.
3. In a bowl, mash avocados and mix in the rest of the ingredients.
4. Grill lamb burgers on high heat for about 5 minutes total.
