Ever since years ago l set my foot in Xi’an Famous Foods in a Flushing basement, this has become my favorite salad. L1 — Tiger Vegetable Salad (Spicy & Cold).
For an unknown to me reason, it is now off their menu. But I got the book and the craving.
There are eight ingredients in this salad. Four of them are the dressing. The quantities listed I have adjusted to my liking. The dressing I multiply six times and sprigs and handfuls I change to bunches:
— a bunch of Chinese celery;
— a bunch of scallions;
— a bunch of cilantro;
— 5-6 longhorn peppers.
We have never had leftovers of this salad. Maybe occasionally — a small container for breakfast.
The original quantities for the dressing in the book are listed like this:
— 1/2 tsp salt;
— 1 tsp sugar;
— 1 Tbsp white vinegar;
— 1 tsp dark sesame oil.
The book also says you can substitute regular celery for a Chinese one. You can. But you will miss the punch of those bitter celery leaves that only the Chinese variety delivers.
